Is this product a hard or soft (flexible) silicone?

Not really sure how to answer this, but I guess it's soft enough that it can be coiled up in the way that you see in the picture, it's not rigid. It can be bent/curved (as you can see in the picture where it's all rolled up.

Kink?

Does a tight bend in the silicone tubing cause the walls to retain a kink, or will it flex back to it's original shape like a soft plastic or rubber?

The walls will not retain a kink, they should flex back to the normal shape, as long as you don't leave it kinked for years and years.
