All of these food grade sealants are rated the same within their respective MSDS, and all of which are tolerable to the 350-400°F ranges. As for which color, that is completely up to you, and thus why they designed multiple colors. As for turning yellow, that is something that happens over time, due to exposure to oxygen, heat, stain-able liquids, dirt, etc.
