Question

Are thermostats interchangeable with other models. I have an Anvil griddle, do I have to buy the anvil thermostat or will this one work.

Both have the same temp. range, 100 to 550.

Technically yes, though I would only recommend using another manufacturers thermostat if a service tech was doing the installation. You would then assume all risk with any substitution.
