These knobs can be difficult to remove if they are old. First check to make sure it is not being held on by a set screw. If it is loosen the screw and the knob should be easier to remove. If that isn't the problem, there might be some caked on grease on the valve shaft. Use a commercial degreaser to try and loosen the knob.
