Yes, this can opener comes with a base that mounts to tables. You can look at the opManual.pdf in the "Learn More" tab above for a picture of what it looks like when mounted.
To remove the gear, place a soft nail or screw on the right side of the gear between the gear and the edge of the gear slot, to hold gear, and turn handle and arbor counterclockwise.
One reason you might be getting metal shavings could be due to a dull blade. If you've had the can opener for a little while the blade may be dull and need to be replaced. I'm currently in talks with an Edlund tech. support staff member and we're going to figure out what's causing the metal flakes. Other than a dull blade we'd need to know the model number of your can opener is to further assist you.
You can't really replace just the knob. Once it's installed, it's not really going to come off. I'd recommend getting this handle assembly that I'm attaching. It's in stock too as of 12/13/2012!!
