Is the slicing knife that you say is included, the disc slicing knife that attaches to the mixer? Like to slice logs of pepperoni. Also is the 3/16" the standard grinding plate used to shred cheese? I can not remember the size I use to use to shred cheese.

The slicer knife is indeed the one that attaches to the mixer. When it comes to the shredder blades, it really depends on the size you'd like your shredded cheese. There generally isn't a standard size as the shred usually depends on the recipe or restaurant's preference.
