The Alfa CC-12 Manual Cheese Cutter has a plastic/polyethylene cutting surface. It's essentially a large heavy duty plastic cutting board attached to a stainless steel frame.
Unfortunately, the manufacturer wasn't able to provide a precise measurement for the largest block that will fit through the cutter, but the replacement cutting wire is 8 3/4" long. That said, we do offer a larger manual cheese cutter which I've included below for your convenience. This larger cutter has a replacement cutting wire that is 14 3/4" long - almost twice the size of the model you're looking at.
