The handbook is attached to the "Learn More" tab (601559handbook.pdf). If the lettuce dryer you own is still under warranty, I advise you to send it in to Electrolux/Dito. If not, please call our sales team for troubleshooting. 1.888.388.6372

Thanks for contacting Tundra Restaurant Supply with your question.

Unfortunately, Electrolux-Dito does not make (and we do not sell) a 10 gallon stainless steel vegetable dryer. That said, here is a link to what salad/vegetable dryers we do offer in hopes that one will suit your needs.
