Thanks for getting in touch with the Tundra Restaurant Supply team with your question Christine.

The Globe C9 Manual Slicer is a belt driven slicer. Belt driven slicers are not recommended for use with cheese as cheeses tend to be a little harder on the belt than other products. Gear driven slicer are recommended over belt driven slicers when it comes to cheese.
