The Turbo Air TAMG-48 manual controlled griddle does not sense the temperature. As a manual controlled griddle, the temperatures are regulated by the size of the flames that are created when you turn the gas control knobs. When the knob is turned to a lower temperature, the flame sizes will decrease causing the temperature to go down. Manual griddles are not calibrated.
